RECIPES AND STUFF
Let's talk about potato salad. Lord knows there are many recipes, but my mom made the best potato salad. I asked her so many times how to make it. I'm sure she had some secret in her purse, she did! Everything but the kitchen sink was in it. I just could not make it. I tried many times but I wasn't successful. When I needed potato salad I had to ask her, making that her special task. Unfortunately my mother is no longer with us and neither is her potato salad. I had to come up with my own, and I do believe I have come up with a winner. People have been asking me for this recipe for years. Unfortunately I couldn't give it to them, because they didn't have the spice crack and it would not have been a useful recipe. Creole -Potato Salad
5 lbs Red Skin potatoes
2 large bunches of Green Onions
1/4 lb Butter
1 lb of Bacon
2 cups of Hellmann's Mayo also known as Best Foods
Spice Crack New Orleans Blend
Clean and wash potatoes, cut into medium sized cubes. Put potatoes in salted cold water and cover. Cook until rolling boil and tender. Drain potatoes, make sure you get all remaining water off. Put potatoes in large bowl. Melt butter and drizzle over potatoes. Generously toss with New Orleans Blend Spice Crack, (I would use about two tablespoons) the more you use the hotter it will get. Let this mixture cool for half an hour. While potatoes are cooling cook bacon until crispy (not burnt). Drain off all bacon grease, paper towels work great! Clean, wash, and dry green onions, cut all of the onion into small pieces. Crumble bacon. Lightly toss bacon and onions with potato mixture. Add mayonnaise. All Done, Mozell's Creole Potato Salad! Lagniappe- Cook bacon flat on cookie sheet in the oven, it comes out perfect!
Cooking Like Mozell Contest Winner
CREOLE SHRIMP AND BACON DEVILED EGGS
1 dozen large eggs (boiled)
1 lb Raw Shrimp
5-6 strips of bacon
2-3 Tlb. of butter
1/4 cup Mayonnaise (I prefer Duke's)
1 tsp Crack Spice plus more for dusting shrimp
2-3 dashes of hot sauce
1/4 tsp of vinegar
Salt to taste
Fry the bacon in a skillet. While the bacon is frying, peel and devein the shrimp. Rinse well and pat dry.
Crack and peel the eggs. Halve and scoop out the yoke into a bowl. Mash the yoke. Set whites aside.
After the bacon is crispy tender, remove from the skillet and drain on a paper towel. Crumble the bacon. Reserve some of the crumbled bacon for garnish.
Add the butter to the bacon fat. Cook until the butter has melted and the oil is hot enough for sauteing.
Liberally dust the shrimp with Spice Crack. Place the shrimp into hot oil, seasoned side down. Liberally add Spice Crack on the up side of the shrimp. Saute until the shrimp starts to turn pink. Flip and cook until the flip side turns pink. About 2-3 minutes each side. Remove from skillet and set aside. Reserve 24 Shrimp.
Rough chop the remaining shrimp. Incorporate the chopped shrimp, most of the crumbled bacon, 1 tsp of Spice Crack, mayonnaise, hot sauce, vinegar into the smashed yoke. Add salt to taste.
Place a heaping tsp of the yoke mixture into each halved egg white. Place a shrimp on top of each egg. Garnish with the remaining bacon.
